Ingredients
Prep time: 20-30min
Cook time: 30-45min
Serves: 4-6
Ingredients:
3-4 large eggplants scored with a fork
1/2 stick of butter
2 Tbs dried mint
salt & pepper
1/2 Tsp cinnamon
1/2 Tsp turmeric
1/2 C finely chopped garlic
Garnish:
1 large onion caramelized crisp
1 garlic caramelized
dried & fresh mint
rashk (fermented yogurt)
Preparation
Instructions:
1. Lay the eggplant whole with poked holes on a cookie
sheet and bake on 350' for about 15-20 min, rotating a
couple times until it's soft.
2. Peel the skin and take out the flesh.
3. Sauté the garlic in generous amounts of olive oil and
butter.
4. Add the eggplant. Mash it while stirring.
5. Add the rest of the ingredients and let it cook on medium
low until it all comes together, for about 15 minutes.
Garnish and serve warm or cold with pita or flat bread.
