About the Recipe

Ingredients
-Canned Tuna in Water (the quantity depends on how many you are preparing. I used 2 cans for 3 peppers but could have used an additional can)
- Your favorite tuna salad additions (I used diced mayo, celery, relish, Dijon mustard, mustard powder, and salt)
-Red Peppers
-Pepper Jack Cheese(or your cheese of choice)
-Olive Oil
Preparation
-Preheat oven 375 degrees
-Prep your peppers by slicing them lengthwise, hulling them out and washing them. Place the peppers open side up in a casserole dish, lined with foil or parchment paper. Drizzle with olive oil and salt.
-Generously spoon in your prepared Tuna Salad
-Top with Cheese
*Bake until Pepper is tender
