Lisa's Cranberry Orange Shortbread

Ingredients:

1 Cup Butter room temperature(use Earth Balance Butter for a Vegan Option)

1/2 Cup Granulated Sugar

1 Cup fresh Cranberries, roughly chopped

2 Cups Flour

1/2 tsp grated lemon zest

Preparation

Instructions:

-Combine butter & sugar and beat on medium speed until well blended

-Add flour 1/2 at a time, until well blended

-Add chopped raw cranberries and lemon zest, mix well.

-Transfer 1/2 of the cookie dough onto plastic wrap and roll into a log.

-Continue with remaining dough.

-Refrigerate for at least 1 hour, or overnight.

-Preheat oven 350 degrees

-Slice dough in 1/4" rounds(or use a cutout for shapes) and bake for 8-10 minutes.

-Switch pans from top to bottom and bake an additional 8-10 minutes, or until cookies start to brown.

-Remove the baked cookies from the oven for a few minutes, then transfer to a wire rack to finish cooling.

-Store in an airtight container or freeze.

-Makes about 2.5 dozen.
